Recipe of the Month
This sandwich is cool and refreshing for those hot days of summer
Strawberry Kiwi Sandwich
3 oz cream cheese (softened)
1/2 cup strawberry jam
Sliced Kiwi (about 2 kiwi)
4 slices white bread
Beat cream cheese with and electric mixer until smooth. Mix in strawberry jam.
Cut 12 bread rounds with 2" circle cutter. Spread about 1 tbls of spread on each
round. Top with 1 slice of kiwi.

Cucumber
& Mint Butter Tea Sandwiches

Cucumber, sliced thin
1 Stick Unsalted Butter
Fresh Mint Leaves, chopped
Wheat Bread
Soften
butter and add fresh mint leaves. Spread butter mixture
generously on bread.
Top one slice of buttered bread
with sliced cucumbers. Dash of sugar on cucumber.
Top
with remaining bread slice. Trim crusts and cut in favorite
shape or diagonally.

Carrot
& Raisin Spread

c. shredded carrots
½ c. creamy peanut butter
½ c. raisins
pumpernickel bread
Mix together carrots, peanut butter and raisins. Add
more peanut butter if mixture
is dry. (For a sweeter
spread - add honey to taste.)
Spread mixture on one slice of bread. Top with second
slice of bread. Trim crusts
and cut into finger sandwiches.
